Beauregard produces high yields of large, tasty, reddish-purple skinned potatoes with deep-orange flesh. These tasty, tender sweet potatoes are perfect for baking and often exceed a pound. Give vines room to grow and develop dark green heart-shaped leaves and small pale, violet pink flowers.
Harvest late Fall before first frost. Frost can affect the quality and texture. Dig up sweet potatoes and let them dry in direct sun to cure. Don't leave outside overnight. Brush off dirt but do not wash as being wet may cause rot. Store in a cool dark place. Grows best in well-drained, loose soil, resistant to soil rot, fusarium wilt, rhizopus soft rot, white grubs, and crack resistant.
