Bred for better flavor and smaller size at Cornell University, Honey Nut looks like a darker, miniature version of butternut squash with deep orange flesh that is sweeter and richer than butternut, it's so sweet that it doesn't require additional sweetening. This cross between butternut and buttercup squash has a thin edible skin unlike other winter squash and doesn't require peeling. Squash grows on 4-5' vines that can be trellised in a smaller garden. The small about 6" long squash turns from dark green to golden orange when ripe. With a lower water content than butternut it's great for roasting or a delicious squash soup.
